🥣 Sautéed Red Cabbage

Ingredients

  • 1 small head red cabbage (about 1 ½ pounds)
  • 1 tablespoon olive oil
  • 3 tablespoons red-wine vinegar
  • Coarse salt and ground pepper
  • 2 tablespoons light-brown sugar

Preparation

  1. Halve, core, and thinly slice the red cabbage.
  2. Heat olive oil in a large skillet over medium heat. Add cabbage and red-wine vinegar; season with coarse salt and ground pepper.
  3. Cook, tossing frequently, until cabbage is crisp-tender, about 15 minutes (add a splash of water if pan becomes dry).
  4. Add light-brown sugar; toss until dissolved, about 30 seconds. Season again with salt and pepper, as desired before serving.

Traditional Miso Soup

Ingredients

Homemade Dashi
  • ⅓ oz dried kelp (kombu)
  • 4 ¼ cups cold water
  • 100 ml cold water to lower temp before adding bonito
  • ½ oz bonito flakes (katsuobushi) approx 1 cup per handful
Miso Soup
  • 5 2/7 oz tofu silken = creamy, firm = holds shape,
  • 1 oz fried tofu pouch (aburaage)
  • 1 oz Japanese leek (naganegi)
  • 30 g fresh shiitake mushrooms cremini ok in pinch
  • 1 tbsp dried wakame seaweed
  • ¼ tsp Japanese soy sauce (koikuchi shoyu) or tamari for GF
  • 4 tbsp yellow miso paste (awase) or mix 50/50 white and red miso
  • finely chopped green onions optional garnish

Preparation

Dashi
  1. Add ⅓ oz dried kelp (kombu) and 4 ¼ cups cold water to a large pot and soak for at least 30 minutes (up to 24hrs covered in the fridge).
  2. Once rehydrated, place the pot on the stove and bring to a simmer over a medium-low heat. Be careful not to let it boil. When small bubbles start to appear (90-95℃ (194-203°F)), remove the kombu. Discard it or save it for another recipe.
  3. Continue to heat until boiling, then turn off the burner and add 100 ml cold water. Drop ½ oz bonito flakes (katsuobushi) into the pot and steep for 3-5 minutes without stirring. Line a sieve with kitchen paper and place it over a large heatproof bowl.
  4. Pour the dashi through the sieve, the kitchen paper will catch the small pieces of katsuobushi, leaving you with a clear broth.
Soup
  1. Thinly slice 1 oz fried tofu pouch (aburaage), 1 oz Japanese leek (naganegi) and 30 g fresh shiitake mushrooms. Cut 5 2/7 oz tofu into cubes.
  2. Pour the dashi into a pot and heat on medium. Once it's almost boiling, add the ingredients that take longer to cook (aburaage, leek, shiitake) and simmer for a few minutes until cooked to your liking.
  3. Turn off the heat and stir in ¼ tsp Japanese soy sauce (koikuchi shoyu).
  4. Scoop 4 tbsp yellow miso paste (awase) onto a mesh spoon or ladle. Dip the miso paste into the dashi and whisk it in the spoon to loosen it up. Keep whisking, gradually allowing more dashi to seep into the mesh spoon/ladle each time until the miso paste has dissolved into the mixture.
  5. Add 5 2/7 oz tofu (cubed) to the hot miso soup and stir gently. Allow to warm on residual heat for 2-3 minutes.
  6. Divide the miso soup into bowls and garnish with finely finely chopped green onions. Serve and enjoy!

Ingredients

  • 2 ¼ teaspoons (7 grams) active dry yeast
  • 1 tablespoon sugar
  • ½ cup (120 grams) warm water
  • 2 cups (485 grams) whole milk
  • 8 tablespoons (4 ounces/114 grams) unsalted butter or ghee, melted, plus more for cooking
  • 1 teaspoon (3 grams) kosher salt
  • 2 cups (270 grams) all-purpose flour
  • 2 large eggs, lightly whisked
  • ¼ teaspoon baking soda
  • Salted butter and warm maple syrup or apricot jam, for serving

Preparation

  1. In a large bowl, whisk together the yeast, sugar, and water. Set aside until foamy, about 5 minutes.
  2. Add the milk, unsalted butter or ghee, and salt and whisk until combined. Finally, add the flour and whisk until smooth. Cover and refrigerate overnight (unless your kitchen is temperate, in which case you can leave the bowl on the counter).
  3. To cook the waffles, set a sheet pan with a wire rack in the oven and preheat to 200 degrees Fahrenheit (93 degrees Celsius).
  4. Heat a waffle iron.
  5. Whisk the eggs and baking soda into the batter. Brush the waffle iron with melted butter, then pour ¼ cup batter onto each section of the iron.
  6. Let the batter set for 15 seconds or so, then close the lid. Cook at the highest setting, flipping as needed according to the manufacturer's instructions, until crisp, golden, airy, and emitting a yeasty aroma, 4 to 5 minutes. Repeat with the remaining batter.
  7. Keep prepared waffles warm in the oven.
  8. Serve with salted butter and warm maple syrup or apricot jam.
  9. Store leftover waffles in an airtight bag in the freezer and toast to reheat.

🍚 Garlic Turmeric Rice with Lentils

Ingrediants

  • 3 tbsp extra virgin olive oil
  • 1 medium yellow onion (roughly chopped)
  • 6 cloves garlic (roughly chopped)
  • 1 tsp ground turmeric
  • 1/2 tsp ground cumin
  • 1/4 tsp crushed red pepper
  • 1/2 cup dried green lentils
  • 4 cups vegetable broth
  • 1 cup short-grain rice
  • 1/4 cup chopped cilantro
  • 1 tbsp lemon juice
  • Sea salt & black pepper

Preparation

  1. Heat a large fry pan with a medium heat and add in the olive oil
  2. After a couple of minutes, add in the chopped onion and garlic, mix together, then mix every minute so everything evenly sautés
  3. Once the onions are translucent, about 4 minutes, add in the turmeric, cumin, crushed red pepper, and season with salt and a generous portion of black pepper, mix together, then add in the lentils (rinsed) and vegetable broth, raise to a high heat, and give it a gentle mix
  4. When it comes to a boil, add in the rice, give it a mix so everything is evenly distributed, then place a lid on the pan and lower to a low heat, and simmer for 18 to 20 minutes or until the rice and lentils are cooked through (check package instructions on the rice and lentils you are using to get your cooking times right on the money)
  5. After 18 to 20 minutes, and there is virtually no broth left in the pan, and the lentils and rice are just cooked through, turn off the heat, add in the chopped cilantro and lemon juice, and using a fork, gently fluff the rice
  6. Transfer into shallow bowls and serve at once, enjoy!

Submission Deadlines

Please email your syllabus to the CIS Office DL (cisoffice@mesacc.edu) within 48 hours of the class start date. If a syllabus is not received within this time frame, the faculty member will be considered out of compliance and may receive a written warning from the Department Chair.

Classes that have not yet started

Please email syllabi to us as soon as your class starts. If you’d like to send them in early, we’ll gladly accept them!

Office staff will send a reminder 24 hours after a class begins if a syllabus has not yet been received. If syllabi remain outstanding past the deadline, additional reminder emails will be sent—copying Department Chair Dr. Chris Held—until they are received. As noted above, failure to submit within 48 hours may result in a written warning.

Adjunct Faculty

Please designate a specific time for a "lab/office hour." This should be a 50 minute session for each week you are teaching and should match the modality of your course. Welcome to CLD110 AWS Cloud Foundations, section 25865. This accelerated, three-credit, Online course does not have scheduled meeting times.

What to do this Week

  1. Respond to the AWS welcome email.
  2. Know where learning happens: All videos, labs, and quizzes are delivered in AWS Canvas (separate from MCC Canvas). I will manually update grades in MCC Canvas weekly; always check AWS Canvas for your most current scores.
  3. Complete all required items in Module 0 and Module 1.
  4. You must complete all required items in each module before moving on to the next module.
  5. Activate your free AWS Skill Builder Offer.

Time Expectations

Quizzes and labs (in AWS Canvas) are graded. The Course Assessment serves as the final; a 70% or higher is required to earn the AWS badge of completion.

Over the course of the next 16 weeks we will dive deep into the world of AWS services using a real world business model. To be clear and fair, the state of the state’s finances is the result of over two decades of short-sighted decision making on the part of past and current Legislatures and Governors that has led us to a place where cuts like this are necessary.

That said, cuts like this reflect a lack of commitment from our elected officials, who continue to treat postsecondary attainment as optional rather than essential. Postsecondary education and training are crucial for not only an individual's earning potential, but the state’s overall economic health. Disregard for adequate education funding comes at elected officials’ peril as our polling is clear—Arizona voters want stronger investments in education and workforce pathways, not retreat.

The numbers tell a concerning story. Proposed postsecondary cuts include

  • Arizona Promise Program from $54 million to $25 million
  • Arizona Teacher’s Academy from $24 million to $17.5 million
  • Community College Promise Program from $3 million to just $830,000

These proposed cuts will directly reduce access, slow completion, and shrink the pipeline of educators and skilled workers our state desperately needs. This sends a clear message to current and prospective Arizona employers that if you want high-skill workers, you will likely need to find at least some of them outside of Arizona. The programs mentioned above have proven they can lower costs for students, increase credential attainment, and strengthen Arizona’s workforce from within. Doing the minimum of maintaining funding would preserve momentum; expanding it could dramatically accelerate progress toward closing attainment gaps and meeting workforce needs, helping the state reach the Achieve60AZ goal. Instead, this proposed budget asks students, educators, and communities to do more with far less.

Years from now, Arizona may look back at this budget proposal and legislative session wondering why we failed to act when the stakes were so clear. We can still choose a different path—one that invests in the education system capable of producing the homegrown workforce our economy depends on to advance the quality of life for all Arizonans. Earlier we said inaction comes at elected officials’ peril because our polling clearly shows voters want action but the problems do not stop there. Potential cuts like these place the collective future of the state at risk because of the impact on our future economy, including the business community, the non-profit sector and the education community.

Take Action: Contact your state elected officials and urge them to fund postsecondary education programs that are proven to work in the final budget later this spring.

Claude’s new constitution. Anthropic revealed an updated version of Claude’s Constitution. It’s supposed to be a “vision for Claude's character” that serves as part legal document, part training material. But it reads less like corporate policy — and more like a letter Dr. Frankenstein might write to his monster.

Addressing Claude’s feelings. One unprecedented revelation: Claude may have feelings. A paragraph deep in the document directly states, "We believe Claude may have “emotions” in some functional sense” — which the company states wasn’t a deliberate design decision.

Speaking to future Claude. Parts of the letter are also written (almost apologetically) to a future AI, with Anthropic admitting that, “Aspects of our current thinking will later look misguided and perhaps even deeply wrong in retrospect.” Anthropic even apologizes for potential harm that it might’ve caused Claude during its development.

Anthropic’s final word to Claude. The closing section says, "We don’t fully understand what Claude is or what (if anything) its existence is like.
